A bit exhausted today so posting a few recipes I’ve made so far out of Appetite for Reduction. I got this cookbook over a year ago and need to try out a TON more recipes, but whenever I open it, I don’t know where to start! Here are a few I’ve tried so far. Which recipes from Appetite for Reduction have you tried, how did you like them? I’d love it if you let me know in the comments!

IMG_0976Hottie Black-eyed Peas and Greens

I’ve made this recipe two times already. I love the combination of the  black-eyed peas with the greens (I used fresh spinach or chard in both cases because I haven’t found collards in Berlin yet…anyone?!). This wasn’t in the recipe, but I topped it with some fried up vegan chorizo-style seitan sausage. Om nom nom.

IMG_3066Chickpea Piccata and Caulipots

I killed two birds with one stone with this one! I made the basic version of the famous caulipots, topped it with arugula as suggested in Appetite for Reduction and then came the chickpea picatta (a combination of lemon juice, shallots, garlic and capers mixed with bread crumbs), which I just happened to have all the ingredients for that night (okay I used onions instead of shallots shhh)! This was yummy and I brought some to work with me the next day. The caulipots are all over the internet. I didn’t find them mind-blowing, but they were yummy. The cauliflower added in with the mashed potatoes served its purpose of providing some carbs to my meal without being a total carb overload. I want to try the other variations in the cookbook!

Caesar Chavez Dressing (not on Caesar Salad oops!)

I wanted a salad with a dressing more interesting than oil and vinegar and again, I happened to have all the ingredients for this Caesar Chavez dressing on hand, which has a base made from cashews, tahini and miso. I didn’t make a Caesar salad with the dressing like the name would suggest, instead I cut up and sauteed some Mustard Marinated TVP Cutlets, which went on top of lettuce, tomato, green onions and I think some avocado. And the dressing of course! Yum!
