Vegan MoFo Day #8!

I had a recipe planned to post for tonight, but then I realized I needed to soak the chickpeas for 12 hours first…oops…planning fail. So here are some things I have made and what they look like! Yeah!

This was so simple and SO delicious. Fried potatoes, red peppers, onions and garlic. Topped with fresh avocado and Frank’s RedHot Hot Sauce, salt to taste. So. Good.

This was a random creation. I had some rhubarb from my co-op, which I cooked down with some sugar, then I made a standard pie crust I found from Google and threw it all together with some custard made from Bird’s Custard Powder and soymilk, topped with fresh strawberries! This was when it was still warm, of course.

This is the Braided Cinnamon Wreath I found on Pinterest, veganized with Bird’s Custard Powder instead of egg and margarine instead of butter. The one on their blog looks prettier, but it sure was tasty.

Some homemade pesto. I vaguely followed the recipe for Cilantro and Basil Pesto from Veganomicon.

This speculoos spread is made quite often by me, especially now that speculoos cookies are popping up in Germany for the holidays! I even made the bread (Cinnamon Raisin Sugar, yum), too!

Some summer rolls with rice noodles, mango, tofu and spinach, which I ate with peanut sauce.

Deliciousness. Red wine, frozen peaches and other veggies, sprite, vodka. Party!
